Pulao is a fragrant one-pot rice dish cooked with aromatic spices, vegetables, or meat. Light and flavourful, it's a versatile meal perfect for any occasion. Paired with raita or curry, pulao offers a comforting and satisfying blend of textures and tastes.
1 cup basmati rice 2 tbsp oil or ghee 1 bay leaf 1 cinnamon stick 2-3 cloves 1-2 cardamom pods
1 medium onion (sliced) 1 cup mixed vegetables (carrot, peas, beans) 1 tsp cumin seeds 1 tsp ginger-garlic paste 2 cups water Salt to taste Fresh coriander for garnish
Wash and soak rice for 20 minutes, then drain.
Heat oil/ghee in a pan. Add cumin seeds, bay leaf, cinnamon, cloves, and cardamom; sauté until fragrant.
Add sliced onion and cook until golden. Stir in ginger-garlic paste and sauté briefly.
Add mixed vegetables, and cook for 2-3 minutes. Mix in drained rice and sauté for 1-2 minutes.
Add 2 cups of water and salt. Bring to a boil, then cover and simmer on low heat until rice is cooked and water is absorbed. Fluff gently with a fork, garnish with coriander, and serve hot.
