Batata Poha is a light and flavourful Indian breakfast made with flattened rice, sautéed potatoes, and aromatic spices. It’s garnished with fresh coriander and a squeeze of lemon, and has a perfect balance of taste, texture, and nutrition.
2 cups Flattened rice (poha) 1 medium potato 1 medium onion 2 green chillies 6-8 curry leaves 1 tsp mustard seeds – 1 tsp ½ tsp turmeric powder 1 tsp sugar Salt 2 tbsp peanuts Lemon juice coriander leaves oil
Rinse poha under running water in a colander until it softens. Let it drain completely. Add turmeric, sugar, and salt to the poha. Mix gently and set aside.
Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, green chillies, and peanuts. Sauté for 1-2 minutes. Add diced potatoes and cook until tender, stirring occasionally.
Add chopped onions to the pan and sauté until translucent.
Add the prepared poha to the pan. Mix gently to combine with the potato mixture. Cover and cook on low heat for 2-3 minutes.
Turn off the heat. Add lemon juice and chopped coriander leaves. Mix well.
Serve hot, garnished with extra coriander and a wedge of lemon.
