Bread Upma is a delicious and quick Indian breakfast dish made from leftover bread, sautéed with onions, tomatoes, green chillies, and a medley of spices. It's often garnished with fresh coriander leaves and a squeeze of lemon. It is delicious to make and easy to whip up quickly.
6-8 slices of bread 1 onion 1 tomato 1-2 green chillies 1 small carrot 1/4 cup green peas
1/4 tsp mustard seeds 1/4 tsp cumin seeds 1/4 tsp turmeric powder 1/4 tsp red chilli powder A pinch of asafoetida (hing) 8-10 curry leaves 2 tbsp oil or ghee Salt Fresh coriander leaves
Cut the bread slices into small cubes and set aside. In a pan, heat the oil or ghee and add the mustard seeds and let them splutter.
Add the cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
Add the chopped onions and green chillies. Add the chopped carrots and green peas. Cook for a few minutes until the vegetables are tender.
Add the chopped tomatoes and cook until they soften and release their juices. Add turmeric powder, red chili powder, and salt. Mix well.
Add the bread cubes to the pan. Cook for a few minutes until the bread absorbs the flavours and becomes slightly crispy. Turn off the heat and garnish with freshly chopped coriander leaves.
