Kaddu ki Kheer, also known as Pumpkin Kheer, is a traditional Navratri dessert made with pumpkin or kaddu, milk, sugar, and nuts and has a cardamom flavour.
2 cups chopped pumpkin 3 cups of milk (almond milk for vegan version) 3 to 4 tablespoons sugar 5 sliced almonds 5 sliced pistachios 5 chopped cashews 1 teaspoon Ghee or oil ½ teaspoon cardamom powder ½ teaspoon grated nutmeg ¼ to ½ teaspoon ground cinnamon
Take a pumpkin was it thoroughly and chop it equally approx 2 cups. And cook in a pressure cooker adding 3 cups of water.
Now Turn off the heat after 2 whistles. Allow the pressure to release naturally. While the pumpkin is cooking.
Slice the nuts accordingly, once boiled strain the cooked pumpkin and discard the water.
Now, mash the cooked pumpkin pieces potato masher. Take a pan add a teaspoon of ghee or oil.
Now Fry the sliced nuts until golden brown. Keep them aside. Now in the pan add mil and boil.
Keep stirring the milk for 5 minutes, after that add mashed pumpkin purée and mix well.
Now add sugar 3-4 tablespoons as desired. Stir well and dissolve the sugar. Add cardamom and sliced nutmeg, slice the almonds, pistachios. Keep these ready.
If you wish you can add ¼ to ½ teaspoon of cinnamon also. Add and mix well. Now garnish with nuts and serve!
