This sooji-tomato upma is zesty, nutritious, and created with a tantalising medley of all our favourite ingredients. It provides a substantial and opulent breakfast.
1 tbsp ghee 3/4th cup of sooji 1 tsp of cumin seeds A pinch of hing 1 dried red chilli 1 tsp red chilli powder 1/4th cup of chopped onions Half cup of chopped tomatoes 1/3rd cup of green bell peppers 1 green chilly chopped 1 tsp chopped ginger 5-6 curry leaves 1.5 cups of water Salt as required
In a pan, dry roast the rava or sooji until it is fragrant and just beginning to turn crisp. It is not necessary to brown it.
Heat the ghee in a pan. the seeds of cumin. Add dried red chilies and hing once you hear a crackling sound. For two minutes, stir.
Next, add the chopped onions and continue stirring until it turns a pale golden colour.
Add in ginger, curry leaves, and green chilies. On medium flame add in Tomatoes, red chilli powder, and turmeric powder.
Add 1 cup of water add salt and boil. After it’s boiled reduce the heat and gradually stir in the sooji.
Continue stirring to prevent the formation of lumps. Put the pan's lid on and give it two minutes to steam.
Let it sit for 10-20 seconds and open, your hot upma is ready! Garnish with coriander and serve!
