Parsi 'choi' a beloved beverage in Parsi culture, is more than just a cup of tea; it’s a ritual that embodies warmth and hospitality. Traditionally prepared with strong black tea, milk, and a blend of spices, this creamy concoction is often enjoyed during gatherings. The unique preparation method, combined with the subtle balance of flavors, makes Parsi chai a treat that can be savored any time of the day.
– 2 cups water – 2 tablespoons loose black tea (like Assam or Darjeeling) – 1-2 tablespoons sugar (adjust to taste) – 1 cup milk (whole or condensed for richness) – 1-2 green cardamom pods, crushed – 1 small piece of cinnamon stick (optional) – A pinch of ginger powder (or a small piece of fresh ginger)
In a saucepan, bring 2 cups of water to a boil over medium heat. Once boiling, add the loose black tea and the crushed cardamom, along with the cinnamon and ginger if using. Allow it to simmer for about 5-7 minutes. The longer it simmers, the stronger the flavor will be
Stir in the sugar while the tea is simmering, adjusting the sweetness to your preference.. Pour in the milk, and let the mixture come to a gentle boil again. Allow it to simmer for another 2-3 minutes.
Remove from heat and strain the chai into cups. Serve hot, and enjoy the aromatic, comforting flavors!
For an extra layer of flavor, you can also add a few cloves or a star anise while brewing. Serve with biscuits or traditional Parsi snacks for a complete experience.
