Planning to make something sweet for the weekend? Try an orange barfi! Not only are oranges in season right now but the recipe is also quite simple and it only needs a few basic pantry staples. Let's have a look at how to go about making this recipe at home!

– 2 cups full-fat milk powder – 1 cup condensed milk – 1/4 cup fresh orange juice – Zest of 1 orange – 2 tablespoons ghee (clarified butter) – A pinch of saffron strands – Chopped pistachios or almonds for garnish (optional)

Grease a square or rectangular baking dish or tray with a little ghee and set it aside. In a large non-stick pan or kadhai, heat 1 tablespoon of ghee over medium heat.

Add the milk powder and condensed milk to the pan and mix well until combined. Cook the mixture on low to medium heat, stirring continuously, until it thickens and starts to leave the sides of the pan. This should take about 8-10 minutes.

Add the fresh orange juice and orange zest to the mixture and continue to cook, stirring constantly, until it thickens further and forms a soft dough-like consistency.

Once the mixture reaches the desired consistency, transfer it to the greased baking dish or tray. Using a spatula or the back of a spoon, spread the mixture evenly in the dish and smooth out the surface.

If using, sprinkle a few saffron strands over the surface of the orange barfi for added flavor and color. You can garnish the top with chopped pistachios or almonds, pressing them lightly into the surface of the barfi.

Allow it to cool and set at room temperature for about 1-2 hours. Once the barfi has set, use a sharp knife to cut it into squares or diamond-shaped pieces.
