A deliciously herby rice dish to enjoy with raita or sabzi, this mint pulao is light yet filling – flavoured with fresh mint and made with aromatic basmati rice.

2 packed cups fresh mint ½ cup basmati rice, washed 6-7 cloves garlic 1 onion, chopped 1-inch piece ginger 4 green chillies ½ carrot, diced 5 string beans, diced 1 piece cinnamon stick 1 bay leaf 2 cloves 1 black cardamom 2 tablespoons ghee Salt, to taste

Grind the mint leaves, garlic, ginger and green chillies to a fine paste and set aside.

Heat the ghee in a pressure cooker and add the whole spices to bloom.

Add the chopped onion and sauté for 3-4 minutes, before adding the vegetables and tossing them around.

After a couple of minutes, add the mint paste and mix everything until aromatic.

Add the basmati rice followed by a cup of water and bring to a boil.

Season with salt and pressure cook on a low flame for 1-2 whistles. Serve hot.
