By Jasmine Kaur

While travelling by train, one may often pack certain things to eat on the journey. However, you can also grab a bite at different stations or from the railway pantry.

Here’s a railway-style vegetable cutlet sandwich that you’ll often find being served for breakfast on the train. Make it at home and let us know if you like it.

Ingredients

• 1 cup green peas • 1 cup French beans • 1 cup chopped carrots • Boiled and mashed potatoes • Breadcrumbs • 4 slices of bread • 1 tbsp tomato ketchup • 1 tbsp mint-coriander chutney • Onion rings

Step 1

Start by mashing the potatoes and mixing it with peas, beans and carrots. Combine it well and bind it with moist bread pieces.

Step 2

Shape it in a roundel with the palm of your hand. Toss in breadcrumbs and slury and shallow-fry on a pan. Take two slices of bread, slather tomato ketchup on one and green chutney on the other.

Step 3

Sandwich the cutlet in between and place onion rings. Place the green chutney slice on top and cut it into half.
