Cooked chauli beans or black eyed peas are a great plant-based protein source which is ideal for vegetarian or vegan diets. When combined with fresh pesto, this legume makes for a great sauce to add to some cooked pasta.

1 cup cooked chauli 10 cashews, soaked ½ avocado 6 cloves garlic 1 cup basil leaves 2 tablespoons grated cheese Juice of ½ lemon ¼ cup cherry tomatoes 2 tablespoons olive oil 3-4 ice cubes

Add the cooked chauli, basil leaves and cashews to a blender with the ice cubes to grind into a smooth paste.

Once the mixture looks creamy, add the avocado, garlic, lemon juice, cheese and olive oil.

Blitz it for a few seconds and season with some salt before setting aside.

Boil any pasta of your choice and drain before adding the sauce and mixing well until fully coated.

Adjust seasoning and add the cherry tomatoes to eat warm.
