Sago pudding is an indulgence that you can include in your meals once a week. Whether served warm or chilled, adorned with fruits or spices, sago pudding is wholesome with its creamy texture and comforting sweetness. It feature delicate sago pearls simmered to perfection in creamy coconut milk and infused with fragrant vanilla. Here's how you can make it at home.

– 1/2 cup sago pearls – 2 cups coconut milk – 1/4 cup sugar (adjust to taste) – 1 teaspoon vanilla extract – Pinch of salt – Optional toppings: Fresh fruits (such as mango or berries), toasted coconut flakes, or a sprinkle of cinnamon

Rinse the sago pearls under cold water in a fine mesh sieve to remove excess starch. Drain well. In a saucepan, bring 4 cups of water to a boil. Add the drained sago pearls to the boiling water and stir gently.

Let the pearls cook for about 10-15 minutes, stirring occasionally, until they turn translucent with a slight chewy texture. Be careful not to overcook them, as they can become mushy.

Once the sago pearls are cooked, pour them into a fine mesh sieve to strain off the excess water. Rinse the pearls under cold water to stop the cooking process and prevent them from sticking together. Set aside.

In a clean saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves completely.

Add the cooked sago pearls to the simmering coconut milk mixture. Reduce the heat to low and let the pudding simmer gently for another 10-15 minutes, stirring frequently until the mixture thickens to a creamy consistency.

Once the pudding reaches the right consistency, remove it from the heat. You can either serve it warm immediately or transfer it to serving bowls and refrigerate until chilled
