Flavoured with the classic Mediterranean flavours of lemon juice, garlic and herbs, this Greek grilled chicken recipe is low on effort but high on flavour.

300 grams chicken breasts, boneless Juice of 2 lemons 3-4 tablespoons olive oil 6 cloves garlic, minced 1 teaspoon dried oregano 1 teaspoon fresh thyme 1 teaspoon chopped parsley Salt and pepper, to taste

Wash and pat dry the chicken breasts before seasoning generously with salt and pepper.

In a separate bowl, combine the olive oil, lemon juice, oregano, garlic and thyme.

Gently place the seasoned chicken breasts into the marinade and leave it to soak up the flavours for at least 3-4 hours.

Heat up a grill pan and drizzle some olive oil on it before placing each of the chicken breasts on the pan.

Cook for 6-7 minutes on one side and 3-4 minutes on the second.

Remove from the pan and rest for a few minutes, before garnishing with chopped parsley and serving warm with rice.
