Tawa Kebabs are a popular Indian street food known for their mouthwatering flavors and crispy, juicy texture. Unlike traditional kebabs that are skewered and grilled, Tawa Kebabs are prepared on a flat iron griddle (tawa), giving them a distinct, slightly charred taste. They are often made with a mix of minced meat or vegetables, along with a blend of aromatic spices. The preparation method ensures that the kebabs are soft on the inside and crispy on the outside

Ingredients

– 250 g minced meat (lamb, chicken – 1 onion, finely chopped – 2 green chilies – 1 tablespoon ginger-garlic paste – 1/4 cup coriander leaves,  – 1/2 cup breadcrumbs – 1 egg (for binding, optional) – 1 teaspoon cumin powder – 1 teaspoon coriander powder – 1/2 teaspoon garam masala – 1/2 teaspoonchili powder – 1/4 teaspoon turmeric  – 2-3 tablespoons oil for frying

Step 1

In a large mixing bowl, combine minced meat or mashed vegetables, finely chopped onions, green chilies, ginger-garlic paste, and coriander leaves. Add breadcrumbs and the egg (if using) to help bind the mixture.

Step 2

Sprinkle in all the spices: cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix everything well until all ingredients are evenly incorporated.

Step 3

Take small portions of the mixture and shape them into flat, round patties. You can adjust the size as per your preference. Make sure they are compact and not too thick.

Step 4

Heat oil on a tawa (flat griddle) over medium heat. Place the kebabs on the tawa and cook for about 3-4 minutes on each side, or until they are golden brown and crispy. Flip gently to avoid breaking them

Step 5

Once the kebabs are cooked, drain them on a paper towel to remove excess oil. Serve hot with mint chutney, onion rings, and lemon wedges.
