The right sauce can elevate your homemade momos to another level! Instead of a regular fiery red sauce, opt for an umami-rich sweet garlic sauce with a hint of chillies, that's spicy with a hint of savouriness with a muted sweetness underlining its taste,. Let's look at the recipe.

Ingredients

– 10-12 dried red chili peppers (adjust according to preferred spice level) – 8-10 garlic cloves, peeled – 1 tablespoon soy sauce – 1 tablespoon rice vinegar – 1 teaspoon sugar – Salt to taste – 2 tablespoons oil (preferably sesame oil)

Step 1

Remove the stems from the dried red chili peppers and discard them. You can also remove the seeds for a milder sauce. Place the dried red chili peppers in a bowl and cover them with hot water.

Step 2

Let them soak for about 15-20 minutes or until they become soft and pliable. Drain the soaked chili peppers and transfer them to a blender or food processor.

Step 3

Add the peeled garlic cloves, soy sauce, rice vinegar, sugar, and a pinch of salt to the blender. Blend the ingredients until you achieve a smooth and thick consistency.

Step 4

Heat the oil in a small saucepan over medium heat. Once the oil is hot, carefully pour the blended chili garlic mixture into the pan. Cook the sauce, stirring constantly, for about 5-7 minutes or until it thickens slightly

Step 5

Taste the sauce and adjust the seasoning according and you can add more soy sauce, vinegar, sugar, or salt to balance the flavors to your liking. Remove it from the heat and let it cool to room temperature and serve.
