Make This Easy Peanut Butter Chicken At Home

Peanut butter chicken is a delicious and comforting dish that combines the rich, creamy texture of peanut butter with tender chicken and a blend of spices. Ingredients

– 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces – 2 tablespoons vegetable oil – 1 medium onion, finely chopped – 3 cloves garlic, minced – 1-inch piece of ginger, minced – 1 cup (240ml) coconut milk – 1/2 cup (125g) creamy peanut butter – 2 tablespoons soy sauce – 1 tablespoon honey or maple syrup

Ingredients

– 1 tablespoon lime juice – 1 teaspoon chili powder (optional for heat) – 1/2 teaspoon ground cumin – 1/2 teaspoon ground coriander – Salt and pepper to taste – Fresh cilantro, chopped (for garnish) – Crushed peanuts (for garnish) – Cooked rice or noodles (for serving)

Step 1

Season the chicken pieces with salt and pepper. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the chicken pieces and cook until they are browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set it aside.

Step 2

In the same pan, add the remaining tablespoon of oil. Add the chopped onion and sauté until it becomes soft and translucent, about 3-4 minutes. Add the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.

Step 3

Reduce the heat to low and stir in the peanut butter, soy sauce, honey, lime juice, chili powder, cumin, and coriander. Mix well until the peanut butter is fully melted and combined with the other ingredients.

Step 4

Slowly pour in the coconut milk, stirring continuously to create a smooth sauce. Add the browned chicken back into the pan, ensuring it’s coated well with the sauce. Let the chicken simmer in the peanut sauce for 10-15 minutes, or until fully cooked and tender. Adjust the seasoning with salt and pepper to taste.

Step 5

Once the chicken is cooked through and the sauce has thickened, remove the pan from the heat. Serve the peanut butter chicken over cooked rice or noodles.
