Make This Easy Lemon Sorbet For A Frozen Summer Treat

The perfect balance of tart and sweet, this refreshing lemon sorbet makes for a light summer dessert to enjoy. Add fresh herbs like mint or basil for added flavour and freshness, or simply enjoy it with a drizzle of some honey.

INGREDIENTS

1.5 cups water 1 cup lemon juice 1 cup sugar 1 tablespoon vodka 1 tablespoon lemon zest

STEP 1

Combine the lemon juice, sugar, vodka and lemon zest in a bowl to mix until the sugar dissolves.

STEP 2

Place the water in the freezer for a couple of hours, in a large container and use a fork to scrape it into shards once it is fairly set.

STEP 3

Transfer to a blender along with the lemon juice mixture and blitz before placing it back in the container again.

STEP 4

Freeze overnight or a minimum of 6-8 hours before serving scoops of the cold sorbet.
