Like most other things that taste better when made at home, hot sauce is a delicious condiment to keep handy and enjoy in sandwiches, wraps or even fried food. Use a variety of fiery Indian chillies to amp up the heat quotient and boost flavour in dishes.

100 grams dried red chillies 100 grams fresh red chillies 50 grams bird’s eye chillies 4-5 cloves garlic ¼ cup vinegar 2 tablespoons sugar ¼ cup water 1.5 teaspoons salt

Soak the dried red chillies in hot water for 20 minutes and add to a food processor after straining.

Add the remaining chillies, garlic and sugar to blend until fairly smooth.

Combine the water, vinegar and salt in a saucepan to bring to a boil, along with the ground chilli mixture.

Continue to boil for 10-12 minutes, until it reduces slightly and cool completely.
Store in a sterilized jar and refrigerate for up to 2 months.
