Make This Easy, Healthy Couscous Upma At Home

If you're looking for a healthy but fun breakfast, try making upma at home with couscous. This healthy staple is finer than semolina and really easy to prep. You can easily fluff it up with some hot water. Here's a breakdown of this quick, savoury recipe.

Ingredients

– 1 cup couscous – 1 tablespoon oil (preferably vegetable or olive oil) – 1 teaspoon mustard seeds – 1 teaspoon cumin seeds – 1 onion, finely chopped – 1 green chili, finely chopped  – 1-inch piece of ginger – 1 carrot, finely chopped – 1 bell pepper – 1/2 cup green peas – 1/4 cup roasted peanuts – Salt to taste – 2 cups water

Step 1

Place the couscous in a large bowl. Bring the water to a boil in a saucepan, then pour it over the couscous. Cover the bowl with a lid or plate and let it sit for about 5 minutes, allowing the couscous to absorb the water. Fluff the couscous with a fork to separate the grains

Step 2

Heat oil in a large skillet or pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter. Add chopped onions, green chilies, and minced ginger. Sauté until the onions turn translucent.

Step 3

Add chopped carrots, bell pepper, and green peas to the skillet. Cook for a few minutes until the vegetables are tender but still crisp. If using roasted peanuts or cashews, add them to the skillet and mix well.

Step 4

Add the cooked couscous to the skillet with the vegetables. Mix everything together gently until well combined. Garnish the couscous upma with fresh cilantro leaves.
