Rose Sandesh is a delicate, floral twist on the traditional Bengali sweet, Sandesh. Made from fresh chenna (cottage cheese) and flavored with aromatic rose essence, this dessert is perfect for special occasions like Diwali, weddings, or any festive celebration. Ingredients

– 1 liter full-fat milk – 2 tbsp lemon juice – 4-5 tbsp powdered sugar (adjust to taste) – ½ tsp rose essence – 2 tbsp rose syrup (optional for color and flavor) – Dried rose petals for garnish – Chopped pistachios (optional)

Step 1

Boil the milk in a pan. Once it reaches a rolling boil, lower the heat, and gradually add lemon juice, stirring gently until the milk curdles. Drain the curdled milk through a muslin cloth and rinse with cold water to remove the lemony taste. Hang the chenna for about 30 minutes to remove excess water.

Step 2

In a bowl, knead the drained chenna until it becomes smooth and soft. Add powdered sugar and knead again until the mixture is silky. Add rose essence and rose syrup to the chenna mixture. Mix well.

Step 3

Divide the mixture into small portions and shape them into discs or small balls. Garnish each piece with rose petals and chopped pistachios.

Step 4

Refrigerate for at least an hour to let the flavors meld. Serve chilled, enjoying the delicate aroma and sweetness.
