Pumpkins are a staple of the season and even though Halloween is over you can still enjoy some pumpkin-centric fun with this delicious pie.
1 ½ cups of pumpkin puree 1 cup of granulated sugar ½ teaspoon of salt 1 teaspoon of ground cinnamon ½ teaspoon of ground ginger ¼ teaspoon of ground cloves 2 large eggs 1 can of evaporated milk 1 unbaked pie crust
Preheat an oven to 220°C and make a basic pie crust by rubbing together flour and butter until it forms a dough. Refrigerate the dough ball.
In a large bowl, combine the pumpkin puree, sugar, salt, cinnamon, ginger, and cloves. Mix well.
Beat the eggs separately and then add them to the pumpkin mixture. Stir until well combined. Gradually add the evaporated milk, mixing continuously.
Roll out the pie crust and lay it into a pie tin. Pour the pumpkin filling into the prepared pie crust.
Place the pie in the preheated oven and bake for 15 minutes. Reduce the temperature to 180°C and continue baking for an additional 40-50 minute
Allow the pie to cool on a wire rack for at least 2 hours. Top with whipped cream, dust with cinnamon and serve.
