You should try making panjiri at home if you're searching for a delicious winter dessert that will both sate your sweet tooth and provide a healthy boost. Make this recipe your base and you can keep adding a tonne of ingredients to make it healthier and tastier.

2 cups whole wheat flour 1/2 cup + 4 tsps. Ghee 2tbsp white sesame seeds 2tbsp flax seed 1/4 cup gum resin (gondh) 1/2 tbsps. Kamar khas 1/2 cup almonds 1/2 cup cashew nuts 1/2 cup lotus seed (makhana) A pinch of ginger powder. 3/4 cup powdered brown sugar. ½ tbsp. cardamom powder

In a nonstick pan, heat up ½ cup of ghee and mix in whole wheat atta until fragrant and starts to brown slightly. In a separate pan, dry roast the flax and white sesame seeds until they start to turn golden brown.

In a pan with two tablespoons of heated ghee, add the gum resin and roast until they puff up. Then add the kamar khas.

Add the almonds to the pan with the remaining ghee and sauté over medium heat. Grind it in a mortar and pestle. Add cashew nuts to the pan and saute till slightly golden brown.

Put the whole wheat mixture into a large bowl and add the almonds, cashew nuts, roasted sesame, and flax seeds, and crushed lotus seeds.

Add all of the roasted ingredients to the same bowl. You can now form them into the shape of your choice, such as laddoos or barfi.
