Make This Delicious Millet Murukku At Home

Murukku is one of the best all-day snacks which can be savoured at any time during the day.  Though it is typically made with rice flour or a blend of rice flour and besan, you can also use nutritious millets to make homemade murukkus. Let's explore an easy recipe for scrumptious homemade millet murukkus.

Ingredients

– 1 cup millet flour – 1 cup rice flour – 2 tablespoons urad dal flour – 1 teaspoon sesame seeds – 1 teaspoon cumin seeds – 1 teaspoon red chili powder – 1/4 teaspoon asafoetida – 2 tablespoons butter or oil – Salt to taste – Water, as needed – Oil, for deep frying

Step 1

In a large mixing bowl, combine the millet flour, rice flour, and urad dal flour. Add the sesame seeds, cumin seeds, red chili powder, asafoetida, and salt. Mix well.

Step 2

Add the melted butter or oil to the dry ingredients. Mix thoroughly until the mixture resembles breadcrumbs.

Step 3

Gradually add water, little by little, and knead into a smooth, soft dough. Grease the inside of a murukku press with a little oil. Use a star-shaped or round holed disc.

Step 4

Fill the murukku press with a portion of the dough. On a greased surface or parchment paper, press out spirals of dough to form murukku shapes. You can also press the dough directly into hot oil.

Step 5

Heat oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop a small piece of dough into the oil. If it rises to the surface immediately, the oil is ready. Slide the shaped murukku into the hot oil. Do not overcrowd the pantry in batches.

Step 6

Fry until the murukku turns golden brown and crispy. Turn them occasionally to ensure even frying. Use a slotted spoon to remove the murukku from the oil and drain on paper towels to remove excess oil.
