Make This Crispy Masala Murukku At Home

Who doesn't love murukku? This savory snack is made from rice flour and besan (chickpea flour) and flavored with a blend of spices like cumin, red chili powder, and sesame seeds. The addition of masala gives it a spicy kick, making it a delicious variation of the traditional murukku. Masala Murukku is deep-fried until golden and crunchy, offering a perfect balance of flavor and texture.

Ingredients

– 2 cups rice flour – 1/2 cup besan (chickpea flour) – 1 tbsp red chili powder – 1 tsp cumin seeds – 1 tbsp sesame seeds – 1 tsp carom seeds (ajwain) – 2 tbsp hot oil or melted butter – Salt to taste – Water (as needed) – Oil for deep frying

Step 1

In a mixing bowl, combine rice flour, besan, red chili powder, cumin seeds, sesame seeds, carom seeds, and salt. Mix well. Add hot oil or melted butter and mix it into the flour until it resembles breadcrumbs.

Step 2

Gradually add water to the flour mixture and knead it into a smooth, soft dough. The dough should be firm but pliable. Use a murukku maker with a star-shaped disc. Grease the inside of the press and fill it with the dough.

Step 3

On a flat surface or parchment paper, press out the dough in circular shapes to form the murukku. You can make them as big or small as you prefer. In a deep pan, heat oil for frying. Once the oil is hot, gently slide the shaped murukku into the oil.

Step 4

Fry the murukku on medium heat until they turn golden and crisp. Make sure to flip them occasionally to ensure even cooking. Once done, remove them with a slotted spoon and drain on paper towels to remove excess oil.
