Having simple and versatile recipes like this matcha-chia pudding to whip up on a busy weekday is the perfect way to eat something nutritious, filling and delicious.
2 teaspoons matcha powder 1 cup coconut milk 1 tablespoon maple syrup ¼ cup sliced kiwi 2 tablespoons chopped almonds 2 tablespoons cacao nibs 2 tablespoons dried cranberries 2 tablespoons shredded coconut
Pulse the matcha and milk in a blender until it combines fully.
Pour into a bowl and add the chia seeds, maple syrup and mix well.
Allow it to set in the refrigerator for 4-5 hours.
Serve cold topped with kiwi, almonds, cacao nibs, dried cranberries and shredded coconut.
