Make This Coleslaw Sandwich For A Light And Refreshing Meal

From a Sunday brunch to a Monday breakfast, a coleslaw sandwich makes a delightful quick meal that’s both wholesome and satisfying. Check out this easy coleslaw sandwich recipe and try it at home today.

Ingredients

3 cups shredded cabbage 1 cup shredded carrots 1/4 cup finely chopped red onion 1/2 cup mayonnaise 2 tbsp apple cider vinegar 1 tbsp sugar or honey Salt and pepper to taste 4 slices of bread 2 tbsp mustard Lettuce leaves

Step 1

Combine all the vegetables in a large bowl. In a different bowl, make a dressing with mayonnaise, vinegar, sugar, salt and pepper and combine well.

Step 2

Pour dressing on vegetables and toss well until everything is evenly coated. Adjust seasoning and refrigerate for 30 minutes.

Step 3

Toast the bread slices lightly for extra crunch. Spread mustard is using and spoon the chilled coleslaw on it.

Step 4

Add lettuce leaves and tomato slices on top of coleslaw and place the second bread slice on top.

Step 5

Press the sandwich and cut it in half. Serve it immediately and enjoy.
