Chia coconut chocolate pudding is a delightful and nutritious dessert that’s both creamy and rich, yet incredibly easy to prepare. Combining the power of chia seeds with the indulgence of chocolate and the tropical flavor of coconut, this pudding makes for a perfect guilt-free treat. Chia seeds are packed with fiber, omega-3 fatty acids, and antioxidants, while coconut milk adds a smooth texture and natural sweetness.
– ¼ cup chia seeds – 1 ½ cups coconut milk (full-fat or light) – 2 tbsp cocoa powder (unsweetened) – 2-3 tbsp maple syrup or honey (adjust to taste) – 1 tsp vanilla extract – Pinch of salt
In a medium-sized bowl, combine the chia seeds, coconut milk, cocoa powder, maple syrup, vanilla extract, and a pinch of salt. Whisk the mixture thoroughly to ensure the cocoa powder is evenly distributed and the chia seeds don’t clump together
– Once everything is mixed, let the pudding sit for about 5 minutes, then whisk again to break up any clumps of chia seeds. This helps the chia seeds absorb the liquid evenly.
Cover the bowl and place it in the refrigerator for at least 3-4 hours, or overnight if possible. The chia seeds will swell and thicken the pudding as they absorb the liquid.
After refrigerating, give the pudding a good stir. If the consistency is too thick, you can add a little more coconut milk. Adjust the sweetness if necessary by adding a bit more maple syrup or honey. Spoon the chia coconut chocolate pudding into serving bowls or glasses.
