As the season for fresh strawberries is here, it is only fair to enjoy the fruit in as many ways as possible. An easy homemade jam is not only a great way to prolong the shelf life of your fruit, but also an innovative way to use up any strawberries that are on the verge of going bad.

350 grams strawberries, halved 2 tablespoons chia seeds Juice of ½ lemon 8-10 tablespoons sugar/maple syrup

Add the halved strawberries to a saucepan and allow it to heat on a low flame.

Add the sugar and continue to stir, to allow the juices from the berries to extract and soften the fruit.

As the mixture begins to bubble, add the chia seeds and stir well to combine.

Once it begins to thicken, add the lemon juice and continue cooking for 3-4 minutes, until glossy.

Cool completely before storing in an air-tight jar for up to 3 weeks in the refrigerator.
