Want your nutrients and your morning dose of coffee all before you head to work? Go for an overnight chia pudding! This recipe saves you a lot of time by incorporating coffee into your one-pot breakfast meal. Let's explore the recipe!

Ingredients

– 1/4 cup chia seeds – 1 cup brewed coffee, cooled – 1 cup milk (dairy or plant-based) – 1-2 tablespoons maple syrup or honey (adjust to taste) – 1/2 teaspoon vanilla extract – Optional toppings: sliced almonds, cocoa nibs, shredded coconut

Step 1

Start by brewing your favorite coffee and allow it to cool to room temperature. Mix Ingredients: In a mixing bowl, combine the cooled coffee, milk, maple syrup or honey, and vanilla extract. Whisk everything together until well combined.

Step 2

Gradually pour in the chia seeds while stirring continuously to prevent clumping. Make sure the chia seeds are evenly distributed throughout the mixture.

Step 3

Cover the mixing bowl with plastic wrap or transfer the mixture into individual serving jars. Place it in the refrigerator to set for at least 4 hours or overnight. During this time, the chia seeds will absorb the liquid and expand, creating a pudding-like consistency.

Step 4

Once the pudding has set, give it a final stir and serve it chilled. You can top it with sliced almonds, cocoa nibs, shredded coconut, or any other toppings of your choice.
