Savoury and protein-packed lentil ‘meatballs’ are a great vegetarian swap for the classic Italian recipe. Combine it with a tangy tomato sauce to ladle over some spaghetti, for a hearty and comforting dinner.

1.5 cups boiled masoor dal 1 cup mushrooms, chopped 1 cup mashed sweet potato ½ cup sauteed onions 8 cloves garlic, minced 1 tablespoon dried oregano 1 cup breadcrumbs ½ cup tomato puree 3-4 sprigs basil 3 tablespoons parmesan cheese 1 tablespoon olive oil Cooked spaghetti, to serve

Combine the masoor dal, sweet potato, breadcrumbs, onions, garlic and mushrooms in a bowl.

Add the oregano and season with salt before shaping into even-sized balls.

Heat the oil in a pan and fry them until browned and slightly crisp.

Pour the tomato puree into the same pan and add a few basil leaves to infuse it’s flavour into the sauce.

Remove the wilted leaves and adjust seasoning before sprinkling some parmesan cheese on top.
