An equivalent of Halloumi cheese – this indigenous ripened cheese is also enjoyed as a popular street food, when sandwiched between kulchas – as a delicacy native to Jammu. A deliciously cheesy evening snack to enjoy with chutneys, drive your hunger pangs away with this crunchy and gooey treat.
100 grams kaladi cheese, sliced 2 store-bought kulchas 1 tablespoon butter 1 teaspoon oil Garlic chutney, for serving Green chutney, for serving Lime wedges, for serving

Heat the oil in a pan and place the sliced kaladi cheese in it to fry for 3-4 minutes on the first side.

Flip it over and fry it on the second side, before transferring to a plate.

Add the butter to the same pan and place a kulcha once it’s foamy.

Top up with the cheese before placing the second kulcha on top and pressing down firmly for the ‘sandwich’ to toast.

Once browned at the bottom, flip and cook for 3-4 minutes on the second side, until the kulcha turns toasty.

Slice in half and serve with a squeeze of lime and chutneys.
