Packed with fibre and naturally sweet, these sweet potato pancakes are the perfect breakfast when paired with maple syrup and Greek yoghurt.

1 cup mashed sweet potato 2 eggs ½ cup milk 1 tablespoon sugar 1 tablespoon maple syrup ¾ cup all-purpose flour 1 teaspoon cinnamon powder 1 teaspoon baking powder 2 tablespoons melted butter 1 pinch salt ¼ teaspoon nutmeg powder

Combine the mashed sweet potato, eggs, milk and maple syrup in a bowl.

Mix together all the dry ingredients separately and combine with the wet mixture.

Add the melted butter to the batter and stir gently before ladling on a hot skillet, greased with butter.

Cook for 3-4 minutes on each side and serve warm with maple syrup and Greek yoghurt.
