Ingredients

– 1 cup roasted peanuts – 1 cup fresh coriander (cilantro) leaves, washed and roughly chopped – ½ cup fresh mint leaves – 2-3 green chilies, or to taste – 2-3 cloves of garlic – 1-inch piece of ginger – 1 tablespoon lemon juice – ½ teaspoon cumin seeds – Salt, to taste – Water, as needed

Step 1

Heat a dry skillet or frying pan over medium heat. Add the peanuts and roast them, stirring occasionally, until they are golden brown and fragrant. This should take about 5-7 minutes. Be careful not to burn the peanuts.

Step 2

Wash the coriander leaves and mint leaves thoroughly and pat them dry. Roughly chop the leaves and set them aside. Peel the ginger and garlic cloves. Rinse the green chilies.

Step 3

In a blender, combine the roasted peanuts, coriander leaves, mint leaves, green chilies, garlic cloves, peeled ginger, lemon juice, cumin seeds, and a pinch of salt. Add a small amount of water to help with blending, starting with 2-3 tablespoons and blend the ingredients until you have a smooth and creamy chutney. 

Step 4

Adjust the amount of green chilies to increase or decrease the spiciness of the chutney. Transfer the peanut chutney to a clean, airtight container. You can serve the chutney immediately with your favorite snacks such as samosas, pakoras, or sandwiches.
