Bring in a flavour rush to your table with the amazing Mexican rice and spicy gravy. It is vibrant, tasty and spicy to give your taste buds a rush of flavours. Here is how to make it:
For Mexican Rice 1 tbsp oil 1 tsp salt 1 tsp red chilli powder 1 tsp chilli flakes 1 tsp oregano 2 tbsp tomato 1 cup cooked rice Fresh cilantro Lemon juice
For Spicy Gravy 2 tsp vegetable oil 1 small onion 2 cloves garlic 1 cup tomato pureed 1 tsp chilli powder 1 tsp smoked paprika 1 tsp cumin powder Salt to taste Fresh cilantro for garnish
Cook some simple rice.
Heat vegetable oil in a pan.
Sauté onions. Add garlic and cook for another minute.
Stir in the rice and cook until lightly golden.
Add chopped tomatoes, cumin, chilli powder, and salt.
Pour in the broth, bring to a boil, then cook until rice is tender.
For gravy in a pan sauté onions and garlic until soft.
Stir in pureed tomatoes and cook for 5 minutes.
Add chilli powder, smoked paprika, and cumin powder.
Simmer for 10 minutes until the gravy thickens.
Garnish with fresh cilantro.
