Make The Milk Bar Cake Taylor Swift Had For Her Birthday At Home

Earlier this week Taylor Swift dug into Milk Bar's famous Birthday Cake at her 34th birthday bash.  If you want to try your hand at making it for yourself, buckle up and don your chef's hat!

Ingredients

Funfetti Cake: 1 cup (2 sticks) unsalted butter, softened 1 cup caster sugar or granulated sugar 2 tsp vanilla extract 3 large eggs, room temperature 2 and 1/4 cups plain flour or all-purpose flour, sifted 3 tsp baking powder Pinch of salt 1 cup full-fat or whole milk, room temperature 1/4 cup full-fat Greek yogurt or sour cream, room temperature 1/4 cup funfetti sprinkles (rainbow jimmies)

Funfetti Cookie Crumbs: 3/4 cup plain flour or all-purpose flour 1/4 cup caster sugar 1 tbsp cornflour or corn starch 1 tsp vanilla extract 1/4 cup butter, melted 3 tbsp funfetti sprinkles Milk Soak: 1/4 cup full-fat or whole milk 1/2 tsp vanilla extract

Ingredients

Fluffy Vanilla Buttercream:  1 cup (2 sticks) butter, room temperature, roughly chopped 2 tsp vanilla extract 4 cups icing sugar or powdered sugar, sifted 2 tbsp full-fat Greek yogurt or sour cream 1–2 tbsp full-fat or whole milk, room temperature 1/8 tsp baking powder

Step 1

In a bowl, beat softened butter, sugar, and vanilla until creamy. Add eggs one at a time, beating after each.

Step 2

In a separate bowl, whisk flour, baking powder, and salt. Add half to the butter mix, then add milk. Mix until combined.

Step 3

Add remaining flour and sour cream, mixing until a thick batter forms. Gently fold in sprinkles. Pour batter into the pan, smooth the top, and bake in a 180 C for 25-30 minutes. Cool on a wire rack.

Step 4

Combine flour, sugar, and cornflour. Pour melted butter, vanilla, and sprinkles; stir until wet crumbs form. Spread on a lined tray and bake at 180 C for 10 minutes. Cool completely.

Step 5

Beat room temperature butter until smooth. Add vanilla and 125g sugar; mix, then add 250g sugar and Greek yoghurt. Scrape sides, add final 125g sugar, milk, and baking powder. Beat until fluffy and creamy.

Step 6

Combine milk and vanilla. Cut three 6-inch layers from the cooled cake. Spoon milk soak over, add buttercream, and sprinkle cookie crumbs.

Step 7

Repeat for the next layer. Place the final cake layer, add buttercream and cookie crumbs. Refrigerate for at least 1 hour to set.
