– 2 medium-sized cucumbers – 2 tablespoons oil – 1 teaspoon mustard seeds – 1 teaspoon cumin seeds – 1 green chili, finely chopped – 1/2 teaspoon turmeric – 1/2 teaspoon cumin powder – 1 tablespoon jaggery – 2 tablespoons chopped fresh coriander
Heat oil in a pan or kadhai over medium heat. Add mustard seeds and cumin seeds. Allow them to crackle. Add the chopped green chili and sauté for a few seconds until fragrant.

Add the chopped cucumbers to the pan. Stir well to coat the cucumbers with the spices. Sprinkle turmeric powder, coriander powder, cumin powder, and salt over the cucumbers. Mix well to combine.

Cover the pan with a lid and cook the cucumbers for about 8-10 minutes, stirring occasionally, until they are tender but still retain a slight crunch. If using jaggery or sugar, add it to the pan and mix well until it dissolves.

Once the cucumbers are cooked to your desired consistency, remove the pan from the heat. Garnish the Kakdi nu Shaak with chopped fresh coriander leaves.
