Ingredients

– 2 cups all-purpose flour – 1/4 cup ghee – 4 cups chilled water – A pinch of saffron strands – Oil or ghee for frying – 2 cups sugar – 1 cup water – 1/4 teaspoon rose water – Sliced almonds for garnishing

Step 1

In a large mixing bowl, combine the all-purpose flour and melted ghee. Mix well until the flour resembles coarse crumbs. Gradually add chilled water to the flour mixture, whisking continuously to form a smooth batter.

Heat oil or ghee in a deep frying pan or kadhai over medium heat. Once the oil is hot, reduce the heat to low. Take a tall and narrow container and place it in the center of the frying pan.

Pour a ladleful of the prepared batter slowly and carefully around the container, allowing it to spread evenly and form a circular shape. The batter should start to rise around the container, creating a well in the centre.

Increase the heat to medium and fry the ghevar until it turns golden and crispy. Gently remove the container from the center, allowing excess oil to drain.

Transfer the fried ghevar onto a wire rack or a plate lined with paper towels to remove excess oil. To prepare the sugar syrup, combine sugar and water in a saucepan and bring to a boil.

Simmer for 8-10 minutes until the syrup thickens slightly. Remove from heat and stir in rose water. Place the fried ghevar in a shallow dish and pour the warm sugar syrup over it, ensuring that it is evenly soaked.
