From fries to chicken, peri peri sauce has gained a lot of fandom, thanks to its smoky hot flavour and unforgettable mouthfeel. The name itself comes from the piri piri peppers which are almost 20 times hotter than jalapeno peppers. However, with modern requirements, it can be made with almost any type of dried red chillies available. Learn how to make your own peri peri sauce at home.

Ingredients

8-10 fresh red chillies 4-5 cloves of garlic, minced 1 medium red bell pepper, chopped 1/4 cup olive oil 1/4 cup white vinegar 2 tbsp lemon juice 1 tsp smoked paprika 1 tsp dried oregano 1 tsp salt 1/2 tsp black pepper

Step 1

Wash the chillies and remove the stems. You can remove the seeds or keep them for an extra spicy kick.

Step 2

Blend the chillies with garlic, red bell pepper, olive oil, vinegar, lemon juice, smoked paprika, oregano, cayenne pepper, salt, and black pepper to a smooth paste.

Step 3

Take out the mixture into a saucepan and simmer them on medium heat for 10-15 minutes. Since the mixture contains oil, you don’t need to add extra.

Step 4

Stir the sauce well to help the flavours come through.

Step 5

Once the sauce is cooked, allow it to cool off completely. Transfer into a clean airtight jar and store in the fridge. Use it as a dip, or a dressing or dry it in the dehydrator to make peri peri powder for fries and more.
