– 4 eggs, hard-boiled – 2 medium-sized potatoes – 2 onions, finely chopped – 2 tomatoes, finely chopped – 2-3 green chilies, slit – 2-3 cloves of garlic, minced – 1-inch piece of ginger – 1 teaspoon turmeric powder – 1 teaspoon red chili powder – 1 teaspoon cumin powder – 1 teaspoon coriander – 1/2 teaspoon garam masala – Salt to taste
Heat mustard oil in a pan or kadhai over medium heat. Once the oil is hot, add chopped onions and sauté until they turn golden brown. Add minced garlic and ginger to the pan and sauté for another couple of minutes until fragrant.
Now, add chopped tomatoes and green chilies to the pan. Cook until the tomatoes soften and the mixture turns into a thick paste. Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt to the pan.

Add the cubed potatoes to the pan and mix them well with the spice mixture. Pour in enough water to cover the potatoes, cover the pan with a lid, and let it simmer over medium heat until the potatoes are partially cooked.
While the potatoes are cooking, prepare the dum mixture. In a bowl, whisk together yogurt, turmeric powder, red chili powder, garam masala powder, and salt. Place the hard-boiled eggs on top of the potato mixture in the pan.
Pour the prepared dum mixture over the eggs and potatoes, ensuring that they are evenly coated. Cover the pan with a lid and let the Alu Egg Dum simmer over low heat until the potatoes are fully cooked, Serve hot with white rice.
