Sugarcane pudding, made with sugarcane juice, rice, and milk, is a type of Indian kheer and is a traditional summer dessert. With a rich garnishing of dry fruits and nuts, it can make any summer day refreshing. Here’s how you can make one for yourself.
Sugarcane juice - 4 cups Rice - 1/2 cup Milk - 1 cup Ghee - 2 tablespoons Raisins - 2 tablespoons Chopped mixed dry fruits - 1/4 cup Cardamom powder - 1/4 teaspoon Pinch of salt
Take fresh sugarcane juice and mix it with rinsed rice on medium heat.
After mixing, let the mixture simmer for about half an hour till the pudding thickens.
Add some milk to the thickened pudding and cook till you get a creamy consistency.
In a separate pan, heat some ghee and add chopped dry fruits and raisins.
Finally, add the sauteed nuts to the pudding and stir them in.
Let the sugarcane pudding chill, and then serve.
