Craving the roadside grilled sandwiches on a rainy afternoon? Cozy up to this delicious veg sandwich that can be whipped up in minutes with ingredients available in your pantry.
4 slices of bread 1 onion, finely chopped ⅓ cup corn ½ cup tomatoes and capsicum, diced ¼ tsp salt and black pepper powder 4 tbsp mayonnaise and butter ½ cup coriander and mint leaves 3 green chillies
In a frying pan, add 2 tablespoons of butter and lightly saute the onions, tomatoes, capsicum, and corn. Set them aside.
In a mixer grinder add the coriander and mint leaves along with the green chillies. Add 2 tbsp cold water to the contents, and blend them to make a smooth chutney.
Apply the rest of the butter on one side of each slices, and the green chutney on the other.
To the cooked vegetables, add the mayonnaise and mix well to coat them completely. Drop spoonfuls of the vegetable filling on top of the bread slices.
Close the top of the sandwich by putting a slice of bread over the vegetable filling. Toast the bread slices buttered side down on the frying pan.
Once the outside of the bread has turned toasty and crispy, take it off the heat and slice diagonally. Serve with ketchup, green chutney, and potato chips as accoutrements.
