Batata Vada is a popular Maharashtrian snack made of spiced mashed potatoes coated in a gram flour batter and deep-fried. Crisp on the outside and soft inside, it's a flavourful, comforting dish often enjoyed with chutney or stuffed in a pav.
4 potatoes 1 tbsp oil 1 tsp mustard seeds 1/2 teaspoon turmeric powder 1 tsp ginger-garlic paste 2 green chillies
8-10 curry leaves 2 tbsp coriander leaves A pinch of asafoetida 1 cup gram flour 1/4 tsp turmeric powder 1/4 tsp red chilli powder A pinch of baking soda Salt Oil
Heat oil in a pan. Add mustard seeds and let them splutter. Add asafoetida, curry leaves, and chopped green chillies. Sauté for a minute.
Add the ginger-garlic paste. Add turmeric powder and mix well.
Add the mashed potatoes and salt. Add chopped coriander leaves and mix. Remove the mixture from the heat and let it cool.
Shape the potato mixture into small balls. In a bowl, mix the gram flour, turmeric powder, red chilli powder, baking soda, and salt.
Slowly add water to make a thick, smooth batter. Heat oil in a kadhai, dip each potato ball into the gram flour batter and fry.
Remove the fried batata wadas with a slotted spoon and drain on a paper towel.
