As mangoes are available in the market in abundance, it is the best time to experiment with them and make new recipes every day. Apart from pickles, South Indian-style mango chutney is among the best fruit-based accompaniments to serve with any dish. Try this quick recipe.
1 teaspoon mustard seeds ¼ teaspoon asafoetida 1 ripe mango 2 tablespoons grated coconut 1 tablespoon oil Salt to taste 8-10 curry leaves 1 teaspoon urad dal Water as required 2-3 dried red chillies
Heat a pan on medium heat, add oil and mustard seeds. Once seeds start to splutter, add urad dal and red chillies. Saute the whole spices.
Add curry leaves and asafoetida. Once they release fragrance, add diced mangoes. Saute the fruit until it becomes soft and mushy.
Now fold in grated coconut into the mixture and add a splash of water. Let everything come together.
After cooking for a couple of minutes, keep the mixture aside for cooling. Blend the fruity combination into a smooth paste.
Transfer the chutney to a bowl and temper it with mustard seeds, red chillies, curry leaves, and urad dal.
Serve mango chutney with any North or South Indian delicacy.
