Make South Indian-Style Lemon Rice For A Lightweight Meal

South Indian lemon rice is a comfort meal that you must try if you haven’t. It is fulfilling, nutritious, and easy to digest. Its recipe is easy to follow and allows you to serve a delicious meal in no time.

Ingredients

200 grams rice Salt to taste 1.5 cups of water 1 tbsp oil 2 tbsp lemon juice 1 slit green chilli ½ tsp urad dal, mustard leaves 8-10 curry leaves A pinch of hing 2 tbsp roasted peanuts ¼ tsp turmeric powder, chana dal 2 dry red chillies

Step 1

Rinse rice, soak it for 20 minutes, and cook until the pressure cooker blows two whistles.

Step 2

At the same time, soak urad and chana dal. 

Step 3

Add a sprinkle of salt to rice and lemon juice. Toss grains using a fork.

Step 4

Heat oil in a kadhai and saute chana dal, urad dal, turmeric, mustard seeds, red chillies, hing, and green chillies.

Step 5

Roast some peanuts and fold in rice. Toss it nicely.

Step 6

Serve the rice with chutney or sambar.
