Whether dosa or fried idli, the South Indian-style coconut chutney is a versatile accompaniment with snacks and main course meals. It adds flavour to a rather bland dish. Here is how you can make authentic chutney by following a few simple steps.
2-3 green chillies 2-3 tablespoons roasted chana 1 tablespoon oil 1 cup grated coconut 1-2 dry red chillies A handful of curry leaves 1-inch ginger A pinch of asafoetida ½ cup plain yoghurt Salt to taste 1 tablespoon chopped coriander leaves ½ teaspoon mustard seeds ½ teaspoon urad dal
Add grated coconut, chopped ginger, roasted chana dal, chopped green chillies, yoghurt, and salt to taste in a blender.
After blending the ingredients, add some water to maintain the consistency. It should neither be too thick nor too runny.
Add chutney to a bowl. Prepare to temper by roasting asafoetida, urad dal, chana dal, mustard seeds, and dry red chillies in hot oil.
Remove tempering from the heat once pulses turn crispy and slightly brown. Add curry leaves to the mix.
Pour the tempering over the chutney and mix it well.
Store the chutney in the refrigerator and serve it with your favourite dish.
