Many people don’t like brinjals a lot. However, if you pick the right recipe, you can transform the vegetables into a finger-licking spicy mixture. Try a quick recipe of South Indian-style brinjal curry for your next gathering.
1-inch ginger 2 brinjals 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1 teaspoon coriander seeds ¼ teaspoon black pepper powder 2 dry red chillies 2-3 cloves 1 cup coconut milk 2 cardamoms 3-4 tablespoons tomato puree Salt to taste 1 onion 8-10 curry leaves 4-5 garlic cloves
Roast cumin seeds, cardamoms, cloves, coriander seeds, dry red chillies, and black pepper in a hot pan. Keep it aside to cool off and grind it into fine powder.
Dice brinjals along with the skin and roast them in the oven until golden brown. You can roast them in a hot pan as well.
Take a kadhai, add oil, and wait for mustard seeds to splutter. Add a handful of curry leaves as well.
Add sliced onions and saute them until golden brown. Add tomato puree and wait for the oil to separate.
Add the spicy curry mixture and a splash of water. Wait for the spices to roast and leave their aroma in the paste.
Add a cup of coconut milk and roasted brinjal to the mixture. After adjusting salt and water, top the curry with coriander leaves and grated coconut before serving.
