Make South Indian Pasi Paruppu Sambar For Your Lunch Today

Pasi Paruppu Sambar, a traditional South Indian lentil stew, is a flavourful and nutritious dish that pairs perfectly with rice or idlis. Made from moong dal (split yellow gram), this sambar is lighter and quicker to prepare than its toor dal counterpart, making it a popular choice for a wholesome meal. 

Ingredients

1 cup moong dal (pasi paruppu) 1 medium onion, finely chopped 1 medium tomato, chopped 1 carrot, diced 1 drumstick, cut into pieces (optional) 1/2 teaspoon turmeric powder 1 tablespoon sambar powder 1 tablespoon tamarind paste Salt to taste Fresh coriander leaves for garnish

Ingredients For Tempering

2 teaspoons oil 1 teaspoon mustard seeds 1 teaspoon cumin seeds A pinch of asafoetida (hing) A few curry leaves 2 dried red chillies 

Step 1

Rinse and cook the moong dal with turmeric powder until soft. Mash it and set aside. 

Step 2

Heat oil in a pan, add mustard seeds, cumin seeds, asafoetida, curry leaves, and dried red chillies. Sauté until the mustard seeds crackle. 

Step 3

Add onions and sauté until golden. Add tomatoes and cook until soft. Add carrots, drumsticks, and sambar powder. Sauté for a few minutes.

Step 4

Pour in tamarind paste and some water. Bring to a boil. Add the cooked moong dal, mix well, and simmer for 10 minutes. Adjust salt to taste. 

Step 5

Garnish with fresh coriander leaves.
