In the rural parts of Tamil Nadu, Kambu Koozh is prepared for breakfast. It is a pearl millet porridge that keeps the body cool during summer. It is the perfect recipe to try in the kitchen when the mercury outside keeps on rising.
1 cup pearl millet (bajra) Salt to taste 1 onion 1 chopped green chilli Water as required
Wash pearl millet, soak the ingredients, and grind it into coarse powder.
Cook kambu rice or bajra in a pressure cooker or an open pot in at least 1.5- 2 cups of water.
Once the grains cool off, make balls with the ingredients and store them in the refrigerator.
Take out one ball and soak it in water overnight or for at least 10 hours to ferment.
Mash the balls and mix them with water. Add salt to taste, chopped green chilli, sliced onions, and curd.
Pour kambu koozh in clay pots and top it with fresh coriander leaves before serving.
