Idiyappam, also known as string hoppers, is a delicate South Indian dish made from rice flour crafted into fine, lacy noodle-like strands. Soft and versatile, it pairs wonderfully with coconut milk, flavourful curries, or sweet accompaniments, making it a wholesome and delightful addition to any meal.
2 cups rice flour 1 ¾ cups water 1 tsp oil ½ tsp salt
Heat water with salt and oil. Once it starts boiling, gradually add the hot water to the rice flour in a bowl.
Mix with a spoon. Once cool enough, knead into a smooth dough.
Grease an idiyappam press or murukku maker with oil. Fill it with the dough.
Press the dough into thin noodle-like strands directly onto greased idli plates or steaming plates.
Place the plates in a steamer or idli cooker. Steam for 8–10 minutes or until cooked through.
Remove and let it cool slightly before serving.
