Hummus is a delicious and healthy dip made from chickpeas, tahini, lemon juice, garlic, and olive oil. It can be enjoyed as a dip with pita bread, vegetables, or as a spread on sandwiches and wraps and stored in an airtight container in the refrigerator for up to a week.
1 ½ cups cooked chickpeas ¼ cup tahini (sesame seed paste) 2-3 tbsp fresh lemon juice 1-2 cloves garlic 2-3 tbsp extra-virgin olive oil 2-3 tbsp water ½ tsp ground cumin Salt Paprika or red chilli powder Fresh parsley
Drain and rinse the cooked chickpeas. For a smoother texture, peel the chickpeas and remove the skins.
In a food processor, combine the tahini and lemon juice. Process for about 1 minute until it becomes smooth and creamy.
Add the minced garlic, ground cumin, and a pinch of salt to the tahini mixture. Process for another 30 seconds.
Add half of the chickpeas to the food processor and process for 1 minute. Add the remaining chickpeas and process until thick and quite smooth.
Slowly drizzle olive oil while continuing to blend until the hummus is smooth and creamy.
Transfer the hummus to a serving bowl. Drizzle with a little olive oil and sprinkle paprika. Garnish with fresh parsley.
