Dal Ka Paratha is a stuffed flatbread made with spiced chana dal filling. This hearty dish combines the wholesome goodness of lentils with aromatic spices. It's typically enjoyed with yoghurt, pickle, or chutney. It is typically made on festivals such as Thadri.
1 cup chana dal (split Bengal gram) 2 cups whole wheat flour 1 onion 2 green chillies 1 tsp cumin seeds 1 tsp coriander powder 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1/2 tsp garam masala Ghee or oil
Cook chana dal in a pressure cooker with enough water and a pinch of salt until it's soft but not mushy. Drain any excess water and let the dal cool down.
Mash the cooked dal lightly. It should be coarse and not completely smooth. In a pan, heat a little oil and add cumin seeds. Once they splutter, add the chopped onions and green chillies. Sauté until the onions turn golden brown.
Add the mashed dal to the pan along with turmeric powder, coriander powder, red chilli powder, garam masala, and salt. Turn off the heat and let the filling cool completely.
In a mixing bowl, combine the whole wheat flour with a pinch of salt. Gradually add water and knead. Cover and let it rest for 15-20 minutes.
Divide the dough into equal-sized balls. Take one dough ball, roll it out slightly, and place a portion of the dal filling in the centre. Gather the edges of the dough to seal the filling inside.
Gently roll out the stuffed dough ball into a paratha. Heat a tawa over medium heat. Cook until both sides are golden brown.
